Somehow this spring I began to get requests for Olive Garden's Zuppa Toscana. I was not in the position to help since there are not any Olive Garden Restaurants in Italia - the chain seems to be American - and their web site just offers attractive pics, but no hints of a recipe. After I was in the united states because of a family health crisis in June I went to the Olive Garden in the local mall. My reaction? Well, inspite of the decor, it's not Italian. The meals began with a heaping bowl of salad, which might have been Italian but for the pickled green peppers and soft garlicky breadsticks of a type I have never noticed before. This has been pursued by a mixture entree composed of fettuccine Alfredo, lasagna, plus a fried breaded chicken with tomato and cheese slathered over it. Then dessert, with the espresso that had a twist of lime in it. The wine has been a woody California Cabernet which was rather similar to a bubble - initially mouth filling then failing to nothing.

To start with, there is the order of the presentation: Italian meals get started with an antipasto , pursued by a first course pursued by an meal with one or more side dishes, and dessert - frequently fruit or cheese, actually in restaurants. Salad is important as a side dish, and do not appears to begin things off. The combination platter has been, well, uneven - plenty of carbohydrates, quite a bit of fat, a few proteins, and without greens. It is true that there were vegetables in the meal, in the salad, but the majority of Italians have them with their primary course. Additionally, there was too much pasta - either the lasagne or the fettuccine could have been fairly enough. I could easily have forgone the dessert however it looked great, although completely American. Coffee with a twist of lime peel, if you aren't familiar with it, is quite odd.

Getting down to the specifics of the meal, the lasagna has been ricotta based, and might have been great had the tomato sauce not been quite sweet. The fettuccine Alfredo had been very rich and I found them missing - a mild cream sauce with just a little cheese may be fantastic with stuffed pasta exactly where it matches the flavors of the components in the filling, but for ordinary flat pasta it's actually not enough. Some minced pork might have been good, together with a much more Parmigiano plus a dusting of pepper. The chicken? The tomato sauce was again too nice. And I'm unsure what it or cheese did there; the breast would have been more exciting had it been butterflied, pounded smooth , breaded, fried, and served having a lime wedge and a sprig of parsley for a garnish.
